Poached Pear with Chia Seed Granola and Honey Ricotta

Surprise your Mum with a twist on classic granola featuring cinnamon infused pears, wholesome chia seeds and smooth honey & vanilla ricotta.  

Ingredients

Granola (Tip! You can also buy the granola from a good health food store)

2 cups of rolled oats

¾ cup of almonds (sliced)

Half a cup of chia seeds

Half a cup of shredded coconut

Half a cup of currants or sultanas

1/3 cup of honey

Half teaspoon of salt

 

Poached Pear 

2 pears (local pears are fine)

4 cups of water

1 cinnamon stick

Vanilla bean (optional)

2 teaspoons of honey

 

Honey Ricotta

250g soft ricotta

2 tablespoons honey

1 teaspoon vanilla extract

75g fine castor sugar

 

Method

Granola

Preheat the oven at 180 degrees. Line a flat baking tray with grease proof paper.

Stir all ingredients together in bowl.

Bake for 15-20 minutes, stirring after 10 minutes (for even colour, or until nuts are golden brown).

Poached Pear

Place all ingredients in large saucepan. Peel pears and place in saucepan until all covered in liquid.

Bring pot to a simmer for 30 minutes. Leave in the juices over night (in fridge).

Honey Ricotta

Mix all ingredients in a bowl. Set in fridge.
